Most Indian dishes are either vegetables or dal (lentils) and it is very important to cook both well. You can never spoil Indian food by overcooking, only by undercooking.

Now I mean the best indicator of truly cooked Indian food is how it looks? When you look down at that pot does it feel cooked? Did the vegetables reach their desired color? Are the pulses still intact? Well – this is your first hint that you have 20-30 minutes left to cook!

When browsing the internet for traditional Indian dishes, avoid those with less than 5 spices. In my experience, most of them are made up by other Americans and are not genuine.

Even simple Indian dishes have an array of spices that combine perfectly to delight the palette. You can’t achieve this kind of complexity with 1 or 2 spices. These two things don’t have much flavor on their own, so you need to use a strong combination of spices to add color and spice to a seemingly dull base.

My best tip for cooking with Indian spices is to halve everything in online recipes. Do not put more than 1/2 to 1 teaspoon initially. If the dish is “overcooked” (Tip #1), taste and slowly add 1/4 tsp.

As an American, I fear salt. and fat butter. I come from the low-fat everything generation and have trouble understanding the amount of salt and ghee (clarified butter) needed to make good Indian food.

Fortunately, nutritional knowledge has improved over the decades, and we now understand that salt is good and fat is not evil. Armed with this knowledge, I allowed myself to add no more than 1/2 teaspoon of salt (true story) after years of cooking Indian food, substituting ghee for olive oil. Game changer.
