Tips And Tricks Cooking – Hi everyone, I’m Jesse from the BuzzFeed feed team and I’ve been sharing some really helpful stuff lately. What I learned in cooking school.

But what I didn’t mention (maybe because I put it out of my mind) is a trick I learned on the bad days ~eggs~.

What is Easter? Well, until you learn how to fix it, it’s a terrible day of cooking school as you cook egg after egg. After trying to mess up hundreds (literally hundreds) of times, I’ve learned some tricks to fix them…

The first rule of thumb for making any type of egg is to take it slow and slow. I understand that eggs with brown edges are popular right now, but if I show my teacher I’ll fail immediately. Why? This is because (usually) brown eggs are hard and dry. You want them to be white, soft and fluffy – so keep the heat low and be patient.

Non-stick pans aren’t great for most things (they don’t get too hot, they don’t scratch), but they’re great for cooking eggs. Sure, you can make eggs in a regular pot, but there’s a good chance your eggs will stick to the bottom. Get yourself a non-stick pan ($22 on Amazon) and crack it while you’re about to cook the eggs – It makes it really easy.

3. Use an iron fish spatula to put them under. (Or remove the cover if you’re worried about scratching the pan).

Okay, okay, listen up: “You can’t use iron on a non-stick pan!” Yes, I understand you shouldn’t, but a thin, flexible knife is the best for gently poaching the eggs. If you’re worried about scratching your pot, a covered fish or plastic wrap ($13 on Amazon) will prevent this problem, but it can easily get under the egg.

4. To see how fresh your eggs are, check the three-digit Julian date on the box — not the expiration date.

To tell how fresh your eggs are, check the Julian date – a number from 1 to 365 (which represents the first day of January 1) – and tells you when the egg was actually laid. Selling by date is a good way to monitor, but it doesn’t show exactly how many. (Determining Julian dates can be a bit tricky, so use this handy tool to calculate it easily).

If you want something really good, beat the eggs in a blender until soft, then transfer them to the blender. Filter ($13.97 on Amazon). This ensures that the eggs are uniform and removes impurities that prevent them from being creamy. Don’t you believe me? Thomas Keller (one of the OG chefs) swears by this method.

Eggs are very tasty and cook very quickly. As with barbecue, remove from heat before cooking. The remaining heat from the pot will continue to cook it.

When you add eggs to the pot, you must mix them! Grab some chopsticks (at least we used to at school) and just pull them out. Doing so will break the eggs and create small curds, thus producing more cream.

Always break your eggs into small bowls (or even one piece) before adding them to the boiling water. This will prevent the egg from going anywhere and allow you to gently transfer it into the water. Eating fresh eggs helps them stay in shape and stay clean and round.

Old eggs are easy to peel and fresh eggs are a complete pain in the shell. The explanation is a bit complicated, but it often boils down to egg whites shrinking enough to make the shell easier.

Each recipe will tell you exactly how long to cook your eggs – but these cooking times assume you’re using cold eggs, not table-side eggs. To prevent accidental overeating, remove your eggs from the refrigerator and use them while they are cold.

11. After boiling, place in the freezer and peel immediately – eggs are harder to peel as they set.

Immerse the egg in cold water and start whisking continuously from the air pocket. (This small air bubble is the base of the trapped egg—blocking it there prevents the egg from cracking.)

If you have leftover eggs (or plan to eat them later), refrigerate them in cold water. This will prevent them from drying out and hardening. (You just soak them in hot water for a minute or two to reheat.) Want to start cooking but don’t know where to start? I have provided these cooking tips and tricks for beginners. Cooking with fresh ingredients will allow the food to retain its nutritional value unlike processed foods. Processed foods are laced with artificial ingredients, pesticides, and preservatives.
