Chicken breasts are usually thinner at the ends and thicker in the middle, meaning that when the chicken is cooked in the center, the ends become rubbery and dry.

While you can put your chicken in the fridge to brine, don’t throw it into a cold oven from the fridge. If you do, it won’t cook evenly. When the middle is cooked, the outside is dry.

At this temperature, the chicken will be golden on the outside and incredibly juicy on the inside. If you go lower, the chicken may dry out because it has to be in the oven for a long time.

I don’t recommend cooking frozen chicken in a regular oven because the chicken can take too long at dangerous temperatures. Make the chicken breasts in the Air Fryer instead, as chicken breasts can be frozen in the air fryer.

While the microwave can be used with care to freeze chicken breasts, I do not recommend cooking chicken in the microwave. The outside will be overcooked and the inside of the chicken will be rubbery. If you have a microwave that doubles as an oven, you can try cooking your chicken breasts in a 425 degree F oven (or 400 degrees if using convection) for 12 to 20 minutes depending on the size of your breasts.
