Baked Fried Chicken Drumsticks Recipe – These crispy chicken thighs are very simple and quick to make. Cooked to golden perfection, these baked drumsticks are very juicy and moist along with being flavorful.

These chicken drumsticks were one of the more “delicious” things I’ve made for dinner in a while. Most of the time I cook boneless, skinless chicken breasts or thighs, so I always miss that crispy skin.

Super easy to make, I prepared them the same way as for crispy chicken wings and they came out perfect. Even better, these butts get their crispy skin from baking!

You also need a baking rack on top of the baking sheet. I like to line my sheet pan with tin foil for easy cleanup.

This is my meat thermometer to make sure the internal temperature of my meat is good to go. It’s also magnetic so I have it on my fridge door to save drawer space!

Many times chicken loses its crispiness when reheated in the microwave. I am lucky enough to have a working toaster oven in the shared kitchen. To keep the thighs crispy, I microwave the chicken for 1 minute then crisp in a broiler at 400F for 2-3 minutes. This prevents the chicken from drying out as it takes more than 2-3 minutes alone in the toaster.

If you ask me, chicken thighs beat chicken breasts any day (new word). I’d rather grab a leg with my fingers and rip that meat off the bone than stab a chicken breast with a knife and fork!

So if you’re in my camp – or really, even if you’re not (!) – here’s a delicious everyday chicken leg recipe. It’s full of flavor with a simple, BBQ rub-like seasoning made with just paprika, onion and garlic powder (you have all 3 in your pantry!!) flour to coat the bones.

Looking for a little trick to get the skin nice and sharp? A touch of baking powder. Yes indeed.

Baked Chicken Legs

Here’s what you need to make these drumsticks. Baking powder is the secret ingredient that makes the skin crispy. Meanwhile, the flour is used to roll out the spice mixture in large quantities so that we can cover the chicken legs all over.

The trick to crispy baked drumsticks is to stretch the skin of the drumsticks as much as possible (because the meat doesn’t get crispy!) and then cover the skin evenly all over with flavored flour.

These drumsticks are very universal in character and are compatible with a wide range of other dishes. Try these drumsticks with fried rice and a simple garden salad, as shown above. Otherwise, make a big batch of macaroni salad or potato salad—these are great big-batch sides that will keep in the fridge for days. For something different, there’s my marinated vegetable pasta salad (big starch + vegetable side), quinoa coleslaw (the kale is marinated!) or even a big sweet potato salad.

3. BAKING POWDER PURPOSE – Not to be confused with baking soda/bi-carb which is the same as triple strength baking powder and doesn’t taste as good!!

Easy Baked Chicken Drumsticks

Baking powder is a secret trick to making chicken skin crispier, a tried-and-true method with chicken wings (a very popular recipe on my site!). It doesn’t make these drumsticks crushingly crispy because they’re seasoned instead of regular skin (like wings), but if you make these drumsticks without it, they’re noticeably less crispy. You can’t taste the baking powder.

4. Tray preparation – why foil lined? It makes your cleaning life easier. Why stretch? For crunchy bottoms! Don’t have a rack? Instead, line with paper and flip the buns halfway through, expecting to add another 5 to 10 minutes to the baking time to crisp the top.

Yes you can. I recommend using bone-in chicken thighs. I prefer skin-on chicken for this type of dish. The skin acts as a protective layer to prevent the meat from drying out and makes the outside crispy. It’s a win-win!

* To get really crispy skin, you need to dry the chicken thoroughly before applying oil and seasonings. Use a paper towel to dry the chicken legs. By removing excess moisture from the skin, you will get that perfectly crispy skin.
