Bbq Chicken Thighs And Drumsticks – Most people seem to gravitate toward white meat when eating any type of chicken, but I love dark meat. Moist, soft and delicious, IMHO.

Both drums and thighs are fine. This recipe works with all parts of the leg because we’re looking at internal heat, not a set time.

I decided to cook both legs – the drumsticks are attached to the thighs because they have heart. These are sometimes called chicken quarters.

Grilled Chicken Drumsticks (bbq Sweet Chili Sauce)

I cook with a charcoal grill, but you can apply these principles to a charcoal grill. With chicken legs, like most meats, I like to use a combination of direct and indirect heat. (See FAQ)

First, put the chicken leg on the fire and cook for two minutes on each side, just to sear the meat a little. Then move the legs to a hotter part of the grill.

Close the grill lid and let the meat cook, undisturbed, for 20 minutes. If your grill has a thermometer, try to maintain a temperature of about 325-350F.

Check the temperature of the meat after 20 minutes. I use my favorite meat thermometer for this, which has a probe that you insert into the thickest part of the meat and a long cable attached to a digital readout.

How To Make Grilled Chicken Legs + Marinade Recipe

Planning ahead means I put the thermometer in the meat before the meat is done. The other 99% of the time I use my nail to hook a large piece of meat and insert the probe into the thick part.

When the thermometer reaches 155 F, sear the chicken legs over direct heat. This is where you need to add a little BBQ sauce if you are using it. Or maybe you don’t choose any sauce, in which case you can cook it skin. Direct heat is also helpful at this time.

Turn the chicken every 4-5 minutes over direct heat, especially if using barbecue sauce. You want the soup to caramelize but not turn into explosive ashes. you know what i mean.

Depending on the size of the chicken pieces and the temperature of the grill, it may take 20-40 minutes to reach that temperature.

After the chicken leg is done, remove it from the meat and put it on a plate or shallow pan, then cover it with paper. Let the meat sit for 10 minutes while you assemble the rest.

If you have a gas grill, light half of the burners. After heating, the grill will have two different heating zones. Logically, the hottest places are on the light bulb(s) – this is direct heat. One side of the grill will be hot, but at a lower temperature. This is indirect heat.

Generally, direct heat is used for anything that cooks quickly or needs an external “char”, such as sausage. Indirect heat is “low and slow” – very similar to cooking in an oven. Large pieces of meat use indirect heat to cook them completely without burning the outside.

My grill has 3 burners. When it’s hot, I light at least two of them. In the direct heat part of the cooker, I use the center on the 2 burners. I turn off the medium burner to cook over indirect heat. One burner does a good job of maintaining a consistent temperature in a closed grill for this step.
