With our first summer of camping, I fell in love with cooking outdoors. I hate turning on the stove or oven in the camper because it heats it up and costs a lot of money to cool it down again. The same goes for our house, so I make recipes that won’t heat up the house.

If you must use a stove and you already have a grill outside, consider using a side burner (if you have one!). It’s a great way to cook all your meals without heating up the kitchen.

Another tip to keep your home cool during high temperatures is to keep the lights off and the window blinds closed. This prevents the sun from entering the rooms of your home. I know I don’t necessarily like to keep the curtains and blinds closed when I’m at home with the kids, but on those hot days I don’t mind. We put on a movie, make some popcorn and enjoy the time on the couch! Then when the sun goes down and there’s some shade at home, we head out for some fun time with sprinklers, water gun fights, water games, or fun things to do with homemade playhouses!

So I’ve gotten into the habit of making recipes that literally involve throwing ingredients on a pan, throwing them in the oven, maybe a side or two, and dinner is done.

This night when I made it I had to go look for my little Jack Russell who decided to escape through the screen door as Bobby was opening it to go out to wait for Daddy! Needless to say, the steak was a little overdone, but it was still delicious.

I put all the ingredients on a baking sheet, except for the cherry tomatoes, which I cut in half. Halfway through the cooking process, I removed all the ingredients and mixed them together, then added the cherry tomatoes so they were slightly cooked but not broken.
