Cooking For Kids Easy Recipes – I recently rediscovered a cookie recipe that was popular about ten years ago when cake mix cookies were all the rage. This colorful confetti cookie recipe was given to me by a lady at our church who was very pleased that she was able to make cookies that my little girl could eat.

This quick and easy recipe is great for kids to make because it’s just a dump and mix recipe. Perfect for school parties or anywhere there are lots of hungry kids. The recipe makes three to four dozen festive confetti cookies, perfect for birthdays, carnivals, or even Easter!

The original instructions call for colorful fruit-flavored rice flakes, but this time I decided to try it with cocoa rice flakes, a chocolate version. My testers liked both varieties.

I used a generic brand of cereal that is safe for our family. However, classic fruit crumbles, cocoa crystals or your favorite natural, dairy-free variety will also work.

I used the Aldi brand for the yellow cake mix, but Duncan HinesĀ is another good choice. Other dairy-free and vegan 1-pound yellow cake mixes should work. However, vegan cake mixes that do not require eggs may have different results. And gluten-free cake mixes can be a tricky substitute. Their quantity and preparation may differ slightly from traditional cake mixes, which may affect the result.

In addition to eggs and vegan confetti cookies, I recommend trying a vegan egg substitute or aquafaba as a substitute. We haven’t tried it yet, but if you do, please leave a comment!
