We think sticking with king crab or lobster is best for this recipe. The two are very similar, but while the snow crab has long, thin legs, the king crab has extra legs (which means more meat), but a hard shell (which means it can be harder cracked it).

Whether it works, make sure it’s thawed before cooking! If you have plenty of time on your hands, allow the crab legs to thaw overnight in the refrigerator. If you’re pressed for time and don’t have overnight storage, however, run the crab legs under cold (this is important – don’t use warm water here!) water for a few minutes.

According to the FDA, lobster should be cooked until the flesh is “pearl or white, and crisp.” If you cook the lobster at our recommended oven temperature (350°F) for the time we recommend (25 minutes), you should be fine!
