Volume and weight conversions are an important tool in the kitchen. When halving or doubling a recipe, getting the right conversions can make or break your bottom line.

It’s important to note that ounces of volume are not the same as ounces of weight. Liquids and other wet ingredients are likely to be measured in ounces by volume, while dry ingredients (like beans, flour, or sugar) are measured in ounces by weight. On packaged goods, volume ounces are listed as “NET OZ FL” where FL stands for liquid and weight ounces are listed as “NET VT OZ” where VT stands for weight. To convert between volume and weight measurements you would need to know the ingredient’s density, so this isn’t often done.

The first thing we need to do to adjust the quantities in a recipe is to find the conversion factor by which we want to increase or decrease the size of the recipe.

If you know how many servings a recipe makes and you know how many servings you want, use this formula to find the conversion factor.

Kitchen professionals and chefs describe the number of portions as yield. So the conversion factor is the required yield divided by the recipe yield.

So if you want to double the recipe size, then factor 2; If you halve the recipe, the conversion factor is 0.5.

The next step in scaling a recipe is to adjust the amount of each ingredient using a conversion factor.

To do this, multiply each part of the ingredient by the conversion factor to get the adjusted amount. If the conversion factor is two and the recipe calls for three tablespoons of the ingredient, then the recipe with the scale would use six tablespoons (2 × 3 = 6).

The last step is to transform the measures into the appropriate measure. This is an optional step, but it simplifies the recipe.

When you scale a recipe, the measurements used may no longer be appropriate. If the recipe calls for 4 ounces and the recipe is quadrupled, then the new amount would be 16 ounces. Since there are 16 ounces in a pound, you can convert an ingredient count of 16 ounces into 1 pound.
