Scotch eggs hold a special place in my mind. It is a special dish that is usually only served in some food bars: boiled eggs covered with sausage, bread and fries. Very tasty, especially after a few pints.

While some bars charge a premium for these appetizers, they’re easy to make at home and don’t require many ingredients. Read on to learn how to make Scotch eggs in your own kitchen!

According to Britannica, Scotch eggs have a controversial history, but one thing is certain: They don’t come from Scotland. Another legend says that they were created for wealthy travelers in a London shop. Another theory is that it is a twist on a North Indian dish of minced meat and eggs used in curry. In any case, the dish has been around for a long time and is delicious.

Boil the eggs: The first step is to boil the eggs. When cooking an egg, it is more difficult to wrap the sausage because it is soft and unstable. I prefer and recommend using a hard-boiled egg the first few times. Then, you can change it completely to boiled eggs.

Egg and sausage wrap: Make sure the boiled eggs are cooled and cleaned. For the sausage, I keep it simple with breakfast sausage, dried thyme, and a little Worcestershire sauce. A small amount of corn helps to bind the sausage. Before wrapping the eggs and sausage, the eggs must be very hard so that the sausage will stick to them. Use a paper towel to pat them dry.

Poach the eggs: Let the sausage-covered eggs chill in the refrigerator for 30 minutes. This will firm up the sausage and make it easier to work with. After pouring the eggs into the flour, be sure to beat in the added flour. You only need a light dusting of flour to give the beaten eggs something to stick with.

Fry Scotch eggs: Fry in batches in a pan of oil heated to 350°F for 8 minutes. Be very careful when adding eggs to the oil. They are heavy and explode when you put them inside. I like to use a slotted spoon to help reduce them one at a time. Don’t fill your pan too fast. Fry in groups of two to three eggs so that the oil continues to heat. This is an important thing to help protect the eye.

Scotch eggs can be used with a variety of dipping sauces. I’ve seen them served with any kind of mustard, ranch, blue cheese dressing, or just ketchup. Personally, I love honey mustard sauce, so I’ve included a recipe for one below.

So, you have your products. Now it’s time to cook! Here is my easy way to make poached eggs:

First, beat the eggs. Put them in a medium bowl, and whisk until the yolk and whites are well combined.

Add milk or water, and whisk again! Beaten eggs should be yellow in color, with no clear spots or streaks.

Then, place the pan gently. Brush a small non-stick pan with olive oil, or melt a little butter in it. Heat a pan over high heat.

Finally, cooking. Pour in the egg mixture, and let it cook for a few seconds, undisturbed. Then slide a rubber spatula down the pan to form large, smooth mounds of beaten eggs.

Continue to cook over medium heat, folding and stirring the eggs after each one. As you work, be sure to scrape down the sides of the pan with your spatula to continue making the batter and prevent any part of the eggs from drying out.

To make it quick and tasty, stop when the eggs are mostly laid, but a little bit remains. Remove the pan from the heat, season and taste with salt and pepper.

For an easy and delicious breakfast, garnish with scrambled eggs and chopped onions, then dig in!
