A whole roast chicken is something every home cook should master, but I admit it took me a long time. I’ve tried a variety of roast chicken recipes in the past, most of which resulted in a bird that was undercooked or overcooked with dry, mushy meat. But after cooking many more chickens since then, I discovered a secret that I want to share with you.

You don’t need a laundry list of ingredients to make a great roast chicken. A few great-tasting ingredients + a reliable method will do all the heavy lifting in this recipe.

Sometimes I skip adding some of the above flavorings, but I always bake in butter or oil, season with salt and pepper, and garlic and thyme.

Roasting a whole chicken can seem intimidating, but it doesn’t have to be. Here’s my easy step-by-step guide to perfect roast chicken every time.

Stop cooling. Before preparing the oven-roasted chicken, remove the chicken from the refrigerator 30 minutes before cooking to ensure more cooking time. Meanwhile, preheat the oven and place a wire rack in the bottom third of the oven. You don’t want the top of your bird to burn!

Season generously. Most food grade chicken on the grill tastes good because the raw chicken meat is pumped with salt or other brining devices. I’m not a huge fan of Arnold Schwarzenegger’s “pump you up” method, but I do believe in generously seasoning the bird inside and out with a generous amount of kosher salt and freshly ground black pepper.

Don’t think you have to limit yourself to the basics of seasoning. Experiment with different herbs and spices to create flavor variations to give your kalkar a unique flavor, such as:

Play with your vegetables. Vegetables play a double role in this roast chicken recipe. First, stuff the chicken with vegetables and fresh herbs to infuse every juicy bite of chicken with the wonderful flavor from within.

Use a baking dish with low sides or a rimmed baking sheet. The low sides allow the hot air to have more contact with the chicken so it cooks evenly on all sides.

Create a natural baking surface at the bottom of the baking dish. Scattering the vegetables under the bird not only keeps the skin on the underside of the bird from sticking to the pan, but adds flavor all over. They also make a great base for pan drippings. Use a variety of seasonal vegetables to enhance the flavor of different flavors throughout the year.

Cut the vegetables into quarters or large chunks (you don’t even have to peel them.) Add 1 cup of water, chicken broth, or wine to the bottom of the pan, if desired.

Baked and the best. Place the chicken breasts on top of the vegetables in the roasting pan. Bake the chicken at 425°F for 45 minutes. Cover the pan with juice and turn the pan into the oven. Cook for another 30-45 minutes, or when an instant-read thermometer inserted into the inside of the thigh registers 155° to 160°F and the juices run clear. The time will vary depending on the weight of the chicken.

Relax. Transfer the bird to the tent using a cutting board and foil. Plan to add an extra 10 minutes of rest after the chicken is cooked. This helps seal in the juice for a tender bite every time. Remove the vegetables from the baking dish and serve or discard. Serve the chicken warm or refrigerate for up to 3 days.

Bake the chicken at 425°F. We bake our chicken, not bake it – so the high temperature will ensure that the juicy crust is crispy on the inside.

Remove the chicken from the refrigerator 30 minutes before cooking to allow it to cool and allow more time for cooking.

How Long Does It Take To Cook A Whole Chicken

I don’t recommend covering the chicken until it starts to brown a lot. Direct heat with chicken is where you’ll get crispy skin. Covering the chicken will allow steam and soften the skin.

Plan on cooking for 15-18 minutes per pound, then add 15 minutes, plus resting time. For a 5 pound chicken, I plan to cook the roast chicken for 75-90 minutes. However, the cooking time for your bird depends on how big it is and how hot your oven is.
