Oh no! I’m sorry to hear that – It could be that your oven is more efficient than mine (My oven is very old) and actually takes quite a while. If the turkey cooks too long, its muscle proteins coagulate and cause dryness. So maybe instead of the last 30 minutes, try at 20 minutes, and check that it’s done (juices run clear and an instant-read thermometer reads 165°F) and restart if not, and cook in 5-minute increments until done. !

Does “baking pan” mean a standard 13×9? I want to try this, but I want to get the dish right.

So if you make 1 you can use a smaller pan, and if you make a lot you want a large one or maybe use more than 1 so they don’t touch. a great inexpensive alternative to roasting a whole turkey.
