One day I’ll give you the original Southern-style smothered turkey wing recipe, but this one is a little different but incredibly delicious.

Growing up, my mom put grilled turkey wings in her cooking rotation. I never get tired of eating them. She cooks them to pure perfection – the most beautiful color, beautifully seasoned and tender as hell. Then she randomly threw in a turkey wing recipe and those were good too. How does a girl choose? oh i know Grill up some flavorful turkey wings, then slather them in delicious creamy Marsala gravy. Finally, roast everything until it falls off the bone and — here’s that word again: succulent. I really like the Marsala wine here because it provides a slight earthy sweetness against all the richness and an acidic back-note from the lemon. Everything balances out nicely.

I am using about 16 wings. Because, we tear these. We tear them down shamelessly. Literally pull down 3 or 4 wings at a time and eat them for breakfast the next day. There aren’t many proteins that I enjoy eating even two days after making them, but turkey is an exception. These wings are standard. I made the mistake of making only 8 wings once and was like “How could you?!” See from the future husband. He gives these things and always insists that I do extra.

This recipe will feed your family and it’s designed. If you only need to scale this recipe to feed 2-4 people, you can completely halve it. But for a crowd, you need one essential piece of equipment: a large roasting pan. Your roasting pan can be any type of roasting pan, just make sure it’s big enough to hold all of these wings in one layer. But hey, if you pile something on top of each other, that’s okay. Country food is the best food.

Drizzle olive oil over the wings, not too much, just enough to thinly coat each wing. This will vary depending on the number of wings you are cooking.

Meanwhile, combine all the spices in a single layer, then toss in about 2 tablespoons of olive oil. Just enough to thinly coat the vegetables so they don’t burn.

Season them with salt and pepper, you don’t need a ton, but you know I like to season each layer.

Cover the roasting pan tightly with foil and place the wings in a 325 degree oven for 90 minutes. After 90 minutes, remove the foil, increase the heat to 375 degrees and bake for an additional hour.

Immediately begin vigorous beating to smooth out any lumps. The mixture should be like a soft paste – not too dry, not runny, but almost creamy in the middle. Once it is smooth, you can beat it at normal speed.

You keep beating it until it’s peanut-butter brown. Whatever you do, don’t stop hitting. You can burn/burn the roux and we don’t want that.

Pour over the gravy until it looks like this. You’ll want to expose some surfaces so they develop color. Wrap the wings around and cook to coat the spices. Then arrange them in the same layer.

Etiquette is thrown out the window. The slurping, toe-sucking, moaning and foot-tapping begin. These wings are so delicious and easy to make. The only annoying part? Time they take several hours, but the wait is worth it. This is definitely something you can prepare the day before you plan to eat it (which I did), and reheat them in the oven on low the next day.

Equipment needed: Large bowl and large roasting pan. If you don’t have an actual roasting pan, use one of those disposable aluminum foil pans. If you are using an aluminum roasting pan, make sure to place the wings on the middle rack instead of the bottom-middle rack.

I started by cleaning, beating and rinsing the turkey wings. While preparing your stuffing, place in a pan to dry with paper towels. After a quick clean up after the turkey, clean and rinse all your vegetables. Cut off the tops of the peppers, de-vein them and seed them. De-head the garlic, clean the skin from all the cloves, and then chop the roots. Cut off the ends of the green onions. Roughly chop or shred the parsley. Coarsely chop all the vegetables and place them in a food processor. Finely chop/puree all the vegetables in the processor. Add the hot sauce and Cajun seasoning and stir into the mixture.

Another filling. Using the large injection pump (MEAT PUMP) start by filling the pepper stuffing mixture, attach the needle and insert a small knob at the end, inject your Cajun pepper stuffing mixture. Make sure to squeeze something when you take it out.

Do not open the oven door @ all. The scent will occupy your senses for 1 hour to 1-1/4 hours. But then it slows down. Believe me, I wanted to open the door and tear off the foil, because the burning smell was very faint at the time I mentioned. Be very patient and everything will be fine.
