Like my famous lemon chicken thighs, this juicy chicken goes well with tzatziki for dipping and many salads and sides–from mustard potato salad, Greek fries; chopped zucchini; or a large three bean salad (more ideas below.)

The secret to juicy, flavorful chicken drumsticks is in the marinade, made with a few Mediterranean pantry staples like extra virgin olive oil, lemon juice, lots of fresh garlic and a few spices. Here’s what’s in it:

We all know the pain of cutting into a piece of chicken that we have cooked with love and realizing that it is too dry.

This is where a good marinade is key, it preserves the chicken’s juices and ensures that it tastes good. The extra olive oil will keep the chicken moist and help the chicken carry the flavors. That’s why you need to make sure you rub the chicken with spices and olive oil, lemon juice and zest. Even if the chicken sits in the marinade for only 30 minutes, it will make a big difference. And if you have time, marinate them in the fridge for a few hours.

Baked Chicken Drumsticks

Should I cook the chicken feet covered or uncovered? I recommend cooking it uncovered so the chicken skin is nice and crispy.

In this case, I prefer to leave the skin on the drumsticks until they are fully cooked. This will help the flavor and keep the chicken nice and tender. Also, I like to put the drum under the broiler for a while, which helps the skins to crisp up for a nice presentation. I remove the skin before eating the drumsticks, although the super crispy bits are very tasty. It’s a matter of choice.

Step 1: Salt chicken Dry chicken and season well with kosher salt (I use Diamond Crystal brand kosher salt<–affiliate link. If you use Morton's or another brand, be careful because they are high in salt.)

Tip: Be sure to lift the skin and put the salt on the bottom for the best flavor. And if you have time, place the chicken drumsticks on a tray and chill in the fridge uncovered for a few hours. You can do this overnight. This is the trick I use when I want the skins to crack more the next day when I cook them (I talked about this salting trick here)

Best Grilled Chicken Drumsticks Recipe (+ Easiest Marinade)

Rub the spices (oregano, black pepper, coriander, paprika, and cumin) in a small bowl to mix well and coat each piece of chicken evenly. Place the spices in a ziplock bag.

Add chopped garlic and onion slices (yellow, sweet or white onions will work). Zest two lemons (the white “skin” of the lemon must be exposed so that it does not turn yellow). Add the zest. Add the lemon juice from two lemons. Then add at least ΒΌ cup of extra virgin olive oil, this drizzle of olive oil will help bring everything together.

Once everything is added, seal the ziplock bag tightly. Coat the chicken and rub each piece to make sure it is well coated in the marinade.

TIP: give the chicken time to marinate – at least 30 minutes or refrigerate for 2 to 4 hours. Make sure to open the bag and put it on different sides so that the marinade is spread on each side without leaving any part of the chicken untouched.

Preheat the oven to 450 degrees F. Yes, it cooks quickly and stays moist, while the skin is crispy.

Lightly grease a casserole dish with olive oil and arrange the chicken drumsticks. Pour the marinade on top.

Cut another lemon into round pieces, remove the seeds and place each of the lemon slices in the center of the chicken. Trust me, the crispy little chicken with a caramelized lemon crust is heavenly!

Easy Barbecue Chicken Drumsticks Recipe

Place the chicken dish in the center of your oven. Bake at 450 degrees F for about 35 minutes or until the chicken is fully cooked and the internal temperature of the thickest part of the drum registers 165 degrees.

TIP: if you want a crispy skin, put the chicken under the broiler briefly (watch carefully so it doesn’t burn.)

You need a hot oven to cook these pickled drumsticks. Preheat the oven to 450 F. Bake for 30-35 minutes.

If you want to turn them on different sides during cooking, that’s an option, but you can also leave them out for the full 35 minutes, then put them under the broiler briefly if you want more color.

These Honey Mustard Baked Chicken Drumsticks Are Amazing!

When cooked or fully cooked, the chicken should be white. Also, the juices of the chicken should run clear, while before the chicken is fully cooked, the juices may be colored and may contain blood. The surest way to tell when your drumsticks are done is to insert a meat thermometer (joint link) into the thickest part of the chicken (not touching the bone). When ready, the internal temperature of the chicken should register at least 165 degrees F.

To save time, you can make ahead (the night before) this recipe for chicken legs. One of my favorite things to do is prepare the chicken and let it sit in the fridge overnight, that way, it’s ready to cook after a long day at work. It helps to take it out of the fridge for a while before cooking so that it doesn’t get too cold and cooks evenly.

If you have leftovers, let the chicken cool completely before storing in an airtight container. Refrigerate for 2 to 3 days.
