Indian Recipes For Chicken Drumsticks – This is one of the easy and delicious ways to cook Indian style chicken. It is very simple and straight forward. This recipe is very easy to make, it took me 40 minutes to completely chop. It tastes good with rice, biryani, roti, paratha or even with dosa, idli.

I made this for my friend Kripa for her birthday two weeks back with lamb biryani and mixed vegetable garlic raita. He really liked it πŸ™‚ Cooking brings happiness when you prepare it for someone. Birthdays are always special to me πŸ™‚ he is a boy who writes from the inside. πŸ˜‰ I usually prefer to cook with chicken thighs rather than chicken breasts. Sometimes I feel that if the chicken breast is not good, it becomes rubbery. Even though I am a vegetarian, I have my own desire to cook chicken or lamb for my loved ones. It makes me absolutely happy.

Tandoori chicken is a traditional Indian dish of chicken marinated in yogurt, citrus fruits and spices, then roasted in a tandoor, a cylindrical clay oven. The chicken gets its characteristic reddish hue from the combination of spices, the flavor of which is further enhanced by frying them in a pan before adding them to the marinade. Tandoori chicken is an easy dish to prepare and you can recreate the tandoor atmosphere at home by roasting it in a high heat oven. In this recipe, adapted from Food & Wine, the chicken is deliciously seasoned with a super crispy skin. Chicken is best marinated for a few hours or overnight, but if you’re in a pinch, you can simply cover the chicken with the marinade and cook it immediately; it will still be full of flavor.

Instead of making a traditional green chutney, I serve store-bought mango chutney on the side – it adds a gingery sweetness that complements the spices. Serve the tandoori chicken with naan, basmati pilaf with nuts and almonds (or regular basmati rice) and a refreshing cucumber mint salad. Kids love this too!

Drumsticks are a great alternative for tandoori chicken. They have enough fat to stay moist when cooked over high heat. Bone-in chicken thighs would also work and the cooking time would be about the same.

Baked Chicken Drumsticks

Classic tandoori chicken is made with ground Kashmiri pepper, a spice found in Indian grocery stores and some supermarkets. Paprika is a great substitute, so I use that.

The yogurt in the marinade helps the meat; it breaks down the proteins and makes the chicken moist and tender when cooked. (Yogurt is also used to marinate and coat the chicken in chicken tikka masala, another classic Indian dish.)

Then peel the lime and finely chop the fresh ginger and garlic (the ginger and garlic will blend in a food processor but won’t be completely pulverized unless you give them a coarse mince first).

Combine the roasted spices, ginger, garlic, yogurt, lime juice, lime zest, oil and salt in a mini food processor or blender.

Then cut a cut in the drumsticks with a sharp knife. This increases the surface area of the chicken, allowing the marinade to penetrate the meat.

Line a baking tray with strong aluminum foil and place a greased oven rack on top. Place the marinated drumsticks on a wire rack, leaving some space between them.

Finally, place the chicken under the broiler for about 5 minutes, until the skin is super crispy and slightly charred.

The yogurt acts as the base of the marinade. It helps to tenderize the chicken meat, while also creating a crust.
