A crock pot lentil soup recipe is like a vegetable soup that cleans out your produce drawer. Just like borscht – the longer it cooks, the better it cooks – prepare it the night before and just turn on the slow cooker when you leave in the morning!

To soak or not to soak the lens? As lentils are a smaller legume with a thin skin, they cook quickly and do not contain sulphur, they do not need to be soaked – although I always recommend rinsing with cold water!

The most likely cause is that your lens is ‘old’. Check the date on the package and/or how long you kept it open in the pantry.

For the slow cooker version of this recipe, I decided to skip the braising step to keep the preparation simple and streamlined.

If you prefer to add depth of flavor, feel free to first saute the onion in a little olive oil and salt over medium heat.

Puréeing the slightly cooked soup at the end with an immersion or regular blender gives it a dairy-free, creamy quality, so don’t skip this step.

Slow Cooker Lentil Soup with Ham: Add 1-2 cups of chopped cooked ham to the slow cooker along with the lentils. Continue with the recipe. Place extra cooked ham on top, crispy in a pan over medium heat.

Crockpot Lentil Soup with Sausage: Add 1 pound of kielbasa or Italian sausage to the crock pot along with the lentils. After the soup is cooked, take out the sausage, slice it and return it to the soup with spinach.
