What To Do With Leftover Roast Chicken

I don’t know about you, but if I don’t have rotisserie chicken left in my fridge somewhere, something is seriously wrong. Most of the time I take a chicken and put it directly in the refrigerator to distribute in meals during the week. Food like that. Because who doesn’t love a good chicken and bacon pasta!?

I have been meaning to put this recipe on my blog for a long time, but always held back. Does everyone have a signature/”non-traditional” dish? Well, well, yes. This is one of them. I literally do this all the time and it was just the other day that my partner turned to me and asked me if I had uploaded it before, to which I replied “I’m not sure if it’s worth the blog, is it?”. The pasta fell on his face and he looked indifferent. That was my answer.

The one ingredient that throws people off with this recipe is the sweet chili, but it totally works. The sweet chili sauce not only helps create a nice combo of creaminess and spice, but also adds a nice sweetness, which balances well with the salty bacon/Parmesan.

Make sure you use Thai sweet chili sauce or sweet chili sauce or sweet and sour sauce or chili sauce, these are completely different and take away the taste.

Best Leftover Chicken Breast Recipes

Absolutely! The way we recommend to do this is to season and fry a chicken breast on medium-high heat until cooked.
