Mix olive oil, melted butter, wine (if using) and lemon juice, rub all over the chicken, under the skin and inside the cavity.

Rub the chopped garlic over the chicken and under the skin. I do this separately as a final step to maximize the garlic flavor.

Stuff the head of garlic into the chicken cavity along with the rosemary sprigs and the squeezed lemon half. You can also use thyme sprigs or any other herb.

I like to go with all my ingredients in the carcass, over the chicken and under the skin to ensure maximum flavor. You want every inch covered in flavor.

See that crispy skin going on down there? ↓ This is the part we fight about at the table. PLEASE tell us we are normal and your family fights over brittle skin too?

Oven Baked Chicken Recipes That Are Definite Winners

Welcome! I’m Lauren, a mother of four and love good food. Here you will find simple recipes and dinner ideas made with real ingredients, with step-by-step photos and videos. Few dishes are as loved as a golden fried chicken. It’s hard to go wrong with the basic method, but there are a few recipes that rise above the rest, producing a delicious, crisp, tender meaty bird with no extra work. Here’s our guide to get you there.

There is no consensus on the best way to prepare a chicken for grilling; it’s all a matter of personal preference and proven experience. But here are some suggestions on where to start. Try each and then choose your way to check. And note that there is nothing wrong with leaving the bird as it is, salting it and just putting it in the oven.

Here’s a method for cutting the chicken so everyone gets some skin with their meat. If you can afford it, heat a platter for serving. The easiest way is to take
