Anyone with kids knows they love chopsticks. And those who have children also know that when children like something, adults end up eating it again and again. 🙄

All right. Sacrifice as a parent. But your food doesn’t have to be one of these! That is why, over the years, I have come up with many variations to make chopsticks more attractive for adults. And as my kids get older, they learn to appreciate that variety, too. Here are some:

Roasted Greek Chicken Drumsticks

However, nine times out of ten, when faced with chicken feet staring at me from the fridge, I just cook them. No special sauces or marinades. Just a little olive oil, some spices and 40 minutes in a hot oven. Perfection! 🍗

You only need a few simple ingredients to make this easy and delicious chicken recipe. Exact measurements are included in the recipe card below. Here’s an overview of what you’ll need:

Chicken Thighs: I used eight thighs in this recipe, each weighing about 4 ounces. I didn’t remove the skin – I think that’s the best part! If you buy them in a pack of five, you can make ten by following the same recipe and increasing the olive oil by about half a tablespoon.

Olive Oil: I love cooking with this delicious oil. But if you prefer to use an oil with a higher smoke point, you can use melted butter.

Kosher salt and black pepper: If you use fine salt, you should reduce the amount, otherwise the dish may be too salty.

Spices: garlic powder, onion powder, smoked paprika and cayenne pepper. Cayenne pepper greatly enhances the flavor of this dish. Adds a little spice without overwhelming the dish. But if you’re not a fan of spicy food, try using just ⅛ teaspoon (a pinch).

Baking drumsticks in the oven is very easy! Scroll down to the recipe card for detailed instructions. Here are the basic steps:

1. The first step is to preheat the oven to 400 degrees F. Then line a rimmed baking sheet with parchment paper.

2. Now, mix the oil with the spices into a paste. Arrange the drumsticks in a single layer on the baking sheet and cover everything with pastry. You can use a pastry brush or just your hands.

3. The final step is to cook the chicken pieces until their internal temperature reaches 165 degrees F. This should take about 40 minutes for a medium thigh.

Check the chopsticks after the first 30 minutes. If it seems to darken too quickly on top, cover it with aluminum foil and continue cooking until done.

No, you shouldn’t close it. You want the skin to brown and you want the chicken to be baked, not steamed. Then leave the chopsticks uncovered.

Yes unfortunately you can. So keep an eye on them. It should be ready in about 40 minutes, but if the oven gets too hot, it may be done sooner.

The chicken should be fully cooked. It should reach a core temperature of 165°F when measured with an instant-read thermometer that does not touch the bone.

This is one of those main courses that really goes with everything. But since I cook them in a 400°F oven, I like to serve these drumsticks with side dishes that I can cook in the same oven. So I often serve them with one of the following:

You can store leftovers in the refrigerator, in an airtight container, for 3-4 days. Reheat gently, covered, in microwave at 50% power.

Or like me and enjoy them cold! Sometimes I remove the skin, cut it into pieces and use it in chicken cob salad. Or I just pack myself a picnic plate with cold drumsticks, cauliflower “potato” salad and some quick pickles.

These cook relatively quickly and are more difficult to precook than boneless chicken breasts or boneless chicken thighs.

Choose medium-sized skin-on bones over equal-sized chicken thighs so they cook evenly.

The answer depends on the size of the chicken legs and the type of oven and pan.

For chicken thighs weighing 85-113 grams each, bake at 200°C for 30-40 minutes, until the internal temperature of the chicken reaches 76°C.

Place on a baking sheet and bake for 30 to 40 minutes at 400 F until meat is cooked through (170 F).

You can cook them directly on a flat baking sheet or use a rimmed baking sheet, to ensure that all parts of the thighs are crispy.

You can use various seasonings for this recipe, you can dry rub or marinate chicken feet. The problem is, I don’t always have time to marinate chicken (legs, wings, or breasts).

Easy Saucy Baked Chicken Legs

Requires at least 30 minutes or up to 6 hours of marinating for good results. As much as I love pickled chicken, this is usually not an option when I cook on weekdays.

For this baked chicken thigh recipe, I chose a simple combination of spices (pantry staples), mixed with a little olive oil (to refresh the skin of the chicken thighs and help the seasoning stick to the meat), lemon juice (optional), soy sauce. (optional), hot sauce (optional), and a little dijon mustard (optional).

If you decide to skip the optional ingredients and use only dry spices and olive oil, the end result will be great too. I just find the mustard, hot sauce, lemon juice and soy sauce add an amazingly balanced flavor to this chicken dish.

These oven baked chicken thighs are delicious on their own, but you can serve them with sauce on the side.

Yes, you can use skinless drumsticks, but the end result will not be crispy. Cook for about 5 minutes or until the meat is cooked.
