It’s as simple as it gets, and it works every time! The beets came out nicely and the balsamic and thyme added at the end took the flavor to the next level.

Every summer I make my mom’s recipe for pickled beets over and over and never get sick of it. But come winter, I want a beetroot recipe that will warm my soul. This recipe for roasted beets is exactly what I wanted.

When grown and harvested in the warmer months, if you remove the greens from the beets, you can keep beets all season long!

This easy vegetable dish goes well with a variety of dinners and main dishes. They are slightly sweet and the fresh herbs and balsamic vinegar make them very tasty.

On the cutting board, peel all the beets with a sharp vegetable peeler. (Wear gloves if you don’t want your hands to be temporarily stained.) Cut the beets into 1-inch pieces. Place raw beets, oil, salt, and pepper in a 9-by-13-inch baking dish. It is coated in one layer and covered with aluminum foil.

Roast, lifting the foil pieces to stir once or twice, until the beets are tender when pierced with a fork, about 40 minutes.

Let the balsamic make some glaze! In another 10 minutes, the beets will be shiny, soft and delicious! Serve warm or at room temperature.

You can make this roasted beet recipe without the added balsamic vinegar and thyme, but I really like the vinegared beets to balance out the sweet beet flavor. Fresh thyme also makes it even more delicious! It’s fun to experiment with flavors. This is just my favorite!

The key to properly cooking beets once they are cut is to cover them while roasting. Otherwise, they can be difficult! Covering them will trap the steam (just like the skin) and produce tender beets every time!

I usually like to roast vegetables such as squash or roasted turnips in a sheet pan. In the case of beets, I roast in a pyrex or 9-by-13-inch ceramic baking dish and cover with aluminum foil because I want to trap the steam to help soften them.

This is great for meal prep and added as a side dish to meal prep containers. Because it’s so hot, it makes a great side dish. They are also added to salads (paired with goat cheese for a classic combination.) We like to serve it with chicken or crispy grilled pork skin. In fall and spring, when it’s warm enough to grill, these beets pair well with grilled chicken thighs.

Leftover beets can be stored in an airtight container for up to four days. They can be heated in the microwave on high heat, stirring occasionally until steaming. They can also be reheated in a casserole dish (coat them with cooking spray or brush with extra virgin olive oil first.) Make sure they are covered with foil so they don’t dry out. Bake until steaming hot, about 25 minutes at 350 degrees.

I really like beets. Whether in a salad, blended into a smoothie, or roasted and eaten on its own, beets are a delicious, versatile vegetable, and a nutritional powerhouse!

How To Cook Beets (beetroot) For Babies

Now that we’ve established that beets are amazing, let’s talk about how to roast beets. Don’t forget to watch the video!

Use a vegetable peeler to remove the skin from the beets. It’s a messy process, but it will pay off in the end! Peeling and chopping beets before baking reduces the baking time!

If you want to avoid getting your hands pink (which I don’t mind haha) I suggest wearing rubber gloves.

My husband always has rubber gloves on hand for various reasons (cleaning up after sick kids, staining wood, removing a dozen pomegranates, etc.) Wearing rubber gloves when peeling and cutting fresh beets will ensure your hands stay nice and clean!

The next step in making this recipe is to toss the peeled and chopped beets with olive oil and sprinkle with sea salt. Make sure it is mixed well before adding to the pan.
