There is a big difference between farmed and wild salmon. Wild salmon comes from the waters of the Pacific Ocean and has a silky and bright red color. It tastes good, has fewer calories and less fat than farmed salmon. It is also expensive and there are few of them in the market. Farmed salmon is abundant and cheap. It comes from Atlantic salmon stocks and has a feed color, usually the light pink flesh that we associate with ‘salmon’. There are serious environmental issues associated with salmon farming.

I make this oven baked salmon recipe for weeknights quite often. We all love it, especially my little one. I like to bake salmon fillets because they are very easy to make and take about 10 minutes depending on the size of the salmon. Here’s how I did it:

1. Preheat the oven to 375°F and place a rack in the middle of the oven. Next, line a baking sheet or baking dish with parchment paper, or if you prefer, just use a metal pan as done. Remove the salmon from the refrigerator and pat the salmon fillet dry with a paper towel. This way, the olive oil will easily stick to the surface of the salmon because water and oil do not mix.

3. Sprinkle the salmon fillets with salt, pepper and paprika (or Cajun seasoning) and place in the oven.

4. Bake for 10-15 minutes. It is difficult to say the exact cooking time, because it all depends on the size of the fillet. So check it after 10 minutes. If not done, cook for 3 or 5 minutes more.

5. Salmon is done when it reaches a minimum internal temperature of 145˚F. Use a meat thermometer to check the internal temperature. You’ll also know it’s ready when the salmon flakes easily with a fork. Sprinkle with fresh parsley or thyme before serving.

The FDA states that once salmon has reached an internal temperature of 145°F in the thickest part, it is fully cooked.
