They cook relatively quickly and are harder to overcook than boneless chicken breasts or boneless chicken thighs.

The answer is that it depends on the size of the chicken legs and the type of oven and pan.

For 85-113 gram (3-4 oz) chicken thighs, cook at 200°C (400°F) for 30-40 minutes until internal temperature of chicken reaches 76°C.

Place on a baking sheet and bake at 400 F for 30 to 40 minutes until meat is cooked through (170 F).

You can use different seasonings, dried or marinated chicken legs for this recipe. The problem is, I don’t always have enough time to marinate chicken (legs, wings or breasts).

For this baked chicken thigh recipe, I went with a simple combination of seasonings (pantry staples) mixed with olive oil (to crisp up the chicken thigh skin and help the flavors bind to the meat), juice lemon juice (optional), soy sauce (optional), hot sauce (optional), and a little Dijon mustard (optional).

Chicken Thighs: In this recipe, I’m using eight thighs, each weighing about 4 ounces. I don’t remove the skin – I think that’s the best part! If you buy them in packs of five, you can make ten following the same recipe by adding about half a tablespoon of olive oil.

Olive Oil: I love cooking with this delicious oil. However, if you prefer to use an oil with a higher smoke point, you can use melted butter.

Kosher salt and black pepper: If you use fine salt, reduce the amount or the dish may taste too salty.

The chicken must be fully cooked. It should reach a core temperature of 165°F when measured with an instant-read thermometer that doesn’t touch bone.
