You can’t have Thanksgiving here without dressing up. And Polly’s Pink Stuff and Southern Butterbeans and Sweet Potato Casserole. You just can’t.

Although there are certain dishes that are set in stone, every year I always try to add a few new ones to try. It’s usually side dishes, but every now and then I offer a choice for a starter.

I think I can put this stuffed turkey breast on the table. It will be a nice surprise as an additional main dish and a little change for everyone.

I have seen this technique demonstrated many times and every time I looked at it I thought – “Wow, that looks good. I have to do it!” And so I did.

I made the recipe for the stuffing myself, but I used the classic technique of rolling and preparing the turkey breast myself.

You will need half a breast that is butterflied and slightly battered, then stuffed with a delicious filling that includes Italian bread, onions, shallots, dried cranberries, Italian sausage, pine nuts and parsley.

Marinade: I like to marinate boneless pounded turkey breasts before roasting for full flavor and a moist juicy roast. I slap it first because after maintenance slapping will not be easy. So please follow the steps in the same order.

For this recipe I used a marinade of olive oil, lemon zest, minced garlic and spices. It works best to keep the breast covered in the marinade for at least 30-40 minutes overnight. During this time, the marinade softens the meat, the fat from the olive oil stays in the meat when it is baked and makes it moist and tasty.

While the turkey absorbs the marinade, I prepare the stuffing and prepare the rest of the ingredients. Time management works so well to marinate first and then prepare the filling and have the rest of the ingredients ready. I never seem to wait for marinating. Note: You can marinate the turkey breast overnight.

Stuffing: A good stuffing also helps to keep the meat moist on the inside. Therefore, I decided not to use bread and crumbs in this filling. Bread can absorb moisture that leaves the turkey dry, and vegetables like kale, soft onions, garlic, cheese will make a delicious stuffing and moisten the meat from the inside. A bonus is that the recipe is gluten-free.

Butter or oil: Massage the bird from the inside out with a little oil and butter also helps to keep the meat moist. I like to mix herbs with room temperature salted butter and rub inside for an herbaceous flavor and juicy spiced roast turkey.

Remember, flavor and moist texture go hand in hand when cooking boneless turkey breast or any bird. More flavor means moist meat. So, always remember to marinate and pack in bold flavors for a delicious roasted turkey breast.

After the turkey breast is marinated and massaged with herb butter. Then I spread an even layer of the filling with the skin side down. I like to pinch the breast and tie it with string to keep the stuffing inside. Binding also helps keep the breasts in a wheel shape when baking. The resulting roast turkey always looks beautiful!

Tip: Never throw away the turkey breast skin. I like to discuss it. It doesn’t fit the whole roll, but I spread it over the top of the rolled turkey breast before I tie it with string. The skin becomes crispy during baking. It looks beautiful. It tastes delicious!

2) Or follow my technique of cooking at 450 for 12 minutes first… Then reduce the heat to 350 and continue cooking for another 35-40 minutes until the internal temperature of the turkey breast reaches 165 degrees Fahrenheit. The initial high temperature helps to crisp the skin and create fat. The remaining time on low helps to cook the turkey breast completely without drying out the breast meat since the temperature is not very hot/high. Due to the low temperature, it remains moist.

I have to tell you about this stuffing which is an important part of this turkey breast recipe. Except it’s gluten free. It is also very tasty, herbaceous, healthy and full of flavor. This is the kind of filling I like to enjoy with a spoon. 🙂

1) I chose a hearty green – Tuscan Kale for color and texture. Kale will not melt like spinach. So I could use a sharp cheese to complement the refreshing flavors of the olives, capers and lemon zest.
