Are you ever hungry? This was a normal occurrence for me! By the end of the week, I had a lot of leftovers in the fridge going to waste because I couldn’t find a way to use the produce I bought before it went bad. I had to learn a new way, so I started meal planning.

Instead of buying random ingredients, I took the time to plan my meals the week before, including a list of the foods I would need for the week. Shopping became quick and easy and I even saved money!

When it came to cooking, I wasn’t worried or sure what I was going to do, suddenly it was so easy to get dinner on the table. Well! I discovered the magic of meal planning!

Let’s start the week full of chocolate and coffee in this Mocha Smoothie. My lunch is a garden sandwich with bean salad. This sandwich is similar to a chicken salad sandwich. For dinner we will prepare delicious pasta – try the lentil ragout. Smoke, tomato, meat and easy to prepare.

Try this vegan bread sauce for breakfast This sauce only takes 5 minutes to make, and the best part is that it tastes just like eggs! Slice a loaf of bread spread with vegan butter to make bread soldiers. Enjoy leftover lentil ragout for lunch. We love the Leftovers Easy Vegan Meal Plan because it makes life so easy! Cook once, enjoy twice. After dinner we will celebrate Taco Tuesday with Tofu Taco Crumbles. Chewy, meaty and delicious!

Start the morning by enjoying another round of mocha smoothies, yum! Try my easy egg salad sandwich for lunch. I once fed vegan egg salad to a bunch of non-vegans and they didn’t even know it wasn’t real eggs! Then try my favorite Korean lentils for dinner. This recipe only takes 15 minutes and is full of flavor.

Don’t worry, my husband Adam doesn’t like carrots, but he loves these burgers!
