I used snow crab in this recipe, but you can use king crab. Snow crab is sold in skewers, usually by the pound. They are easier to handle and break than king crab legs because of their outer shell. Usually there are at least 4 branches in each group. Their taste is mild and sweet.

King crab legs have a very spiny shell. They come in different sizes and are usually sold individually (by the leg) by the pound. The meat is very tender and sweet. They are more expensive than snow crab. (I usually buy these for New Years!).

Crab is usually precooked and usually frozen. Sometimes, if it is sold thawed, it has been thawed from the frozen state. When the crabs are caught, they are cooked on the boat and then quick-frozen on site. If your legs are orange or red when you buy them, they are already ripe. The process is reheating them.

The best way to thaw them is to put them in the refrigerator overnight (at least 8 hours). You can put them in a bowl and run cold water over them to quickly thaw them.

Crabs should be cooked until the meat is pearly or white and opaque. You can’t tell much from the outside color because when you buy them they are precooked and orange in color. Draw the shoulders (this is the larger white part of the group). It should be pearly white.

Cracking snow crab is easy for me. I hold both legs horizontally with the back of the leg facing me. Then press into the middle of the leg or about 1/4 of the way up from the bottom of the leg. I can always tell if the crab is fully cooked (reheated) and fresh because it breaks easily.

If when I break the crab it does not return a piece of meat and the meat is stuck in it, it is usually because the crab is not long enough, or because it is not broken quickly as soon as possible after roasting. The longer they sit, the harder it is for them to break and the easier it is to get the meat out.
