But they’re delicious, cheap, vegan, and can be made with ingredients you already have in your pantry. So without further ado, let’s start with the most important meal of the day. . .

Ah, breakfast! The most important meal of the day, as they say. And there is some truth in that. But one thing I love about mornings is how fresh and new everything is. Starting the day on a healthy and fulfilling note is an easy way to set the tone for the rest of the day. But most of us don’t want to spend a lot of time preparing breakfast, luckily there are plenty of plant-based options that we can prepare ahead of time or throw together in minutes. Here are my favorites!

If you’re missing the tasty goodness of a non-veg breakfast, may I recommend avocado toast? Here’s my lazy tip for those who don’t like extra dishes. Cut your avocado in half, remove the pit, use a butter knife to cube the avocado in the shell, then squeeze the cubes directly onto the toast. Top with vegan Parmesan and chopped tomatoes. yum!!

What I love about oatmeal is how warm and comforting it is, how many ways it can be served and cooked. On the stove, in the microwave, or even in your Instant Pot! My favorite toppings are Ceylon cinnamon, ripe pears, and dried cranberries, but you can go wild and do whatever you want!

For years before I became a vegetarian or even had it on my radar, I ate this salad for lunch every day. And it was very simple: mixed greens (I like spinach and romaine), black beans, corn kernels, tomatoes or peppers, diced red onion, half an avocado, cilantro, and olive oil. These days I usually skip the olive oil in favor of a chunky soy yogurt, but you might like it. Sweet!

When I was visiting my dad a few summers ago, he confessed that his all-time favorite sandwich is a good old PB&J. This is a classic when it comes to easy vegetarian meals! I don’t really like peanut butter (I know, send me to the Inquisition), but I love peanut butter paired with apricot jam or chia berry jam. Add some raw vegetables or an apple and it’s a simple yet delicious meal for the ages.

Simply toast your favorite sandwich bread, spread it with hummus, add sliced ​​cucumber and mixed greens or microgreens, and you’ve got yourself an easy, healthy, and filling vegan sandwich. Pair with apple and carrot sticks, and that’s lunch!
