When I first became vegan, I found myself choosing random ingredients at the grocery store. I wasn’t sure what to buy! Let’s start the week off with chocolate and coffee in our mocha smoothie. My field chickpea salad sandwich for lunch is a staple for me. This sandwich is reminiscent of a chicken salad sandwich. For dinner, let’s make a hearty pasta — try my lentil ragout. Smoky, tomatoey, meaty and easy to make.

Try my vegan toast dipping sauce for breakfast. This sauce only takes 5 minutes to make and the best part is that it tastes like eggs! Slice some toast with vegan butter to make toast soldiers. Enjoy this hearty Chipotle Lime Bean Salad for lunch. This salad can be made ahead of time and tastes better the longer it sits. Then for dinner, my vegan egg roll in a bowl is a must! It tastes like an egg roll but is made as a healthy breakfast.

On Sunday, have fun making vegan cream cheese at home. Enjoy the leftover chipotle lime bean salad (trust me you’ll want to make this all the time)! And try my creamy pesto pizza for dinner.
