When I first became vegan, I found myself wandering around the grocery store picking up ingredients from wherever I could. I wasn’t sure what to buy! Then when I came home, I faced the dreaded question, what am I going to make for dinner? Sometimes I find myself looking in the fridge and not sure what to do with the strange ingredients I bought. Sometimes I found a recipe that I wanted to try, but realized that I didn’t have all the necessary ingredients.

Have you ever had a hangover? That was normal for me! Then at the end of the week, I have a lot of leftover food that goes to waste in the freezer because I didn’t think of how to use the products I bought before they go bad. I had to learn a new way, so I started meal planning.

Instead of buying random ingredients, I took the time to plan my meals for the week ahead, including a grocery list of everything I would need for the week. Grocery shopping quickly became easier and I was saving money!

When it came to cooking, I was no longer stressed or unsure of what to do, it quickly became easier to get food on the table. Good to go! I discovered the magic of meal planning!

Let’s start the week off with a dose of chocolate and coffee in my Mocha Smoothie. For lunch, my staple is my Ranch Chickpea Salad Sandwich. This sandwich resembles a chicken salad sandwich. For dinner we will make delicious pasta – my lentil ragu. Smoke, tomatoes, meat and easy to make.

Try my vegan toast sauce for breakfast. This sauce only takes 5 minutes to make and the best part is that it tastes like eggs! Slice up some vegan buttered toast to make humble soldiers. Enjoy leftover lentil ragout for lunch. We love leftovers from the Easy Vegan Meal Plan because it makes life so easy! Cook once, enjoy twice. Then for dinner we will celebrate Taco Tuesday with my Tofu Taco Crumble. Chewy, meaty and delicious!

Start your morning by enjoying another round of mocha smoothies, yum! Try my simple vegan salad bread for lunch. I once served vegan egg salad to a crowd of non-vegans and they didn’t realize it wasn’t real eggs! Then try my favorite Korean lentils for dinner. This recipe only takes 15 minutes and is full of flavor.

Start the day with my tofu heart. Enjoy leftover Korean lentils for lunch. For dinner, these vegan mushroom tofu salad wraps are a hit!

Enjoy leftover Tofu Scramble for breakfast. Try the Vegan Tofu Caesar Wrap for lunch – you won’t regret it. And for dinner we will enjoy these vegan beet burgers. Don’t like beetroot? Don’t worry, my husband Adam doesn’t like beets, but he loves these burgers! Beetroot adds color and texture to burgers, but when combined with the other ingredients in the recipe, you won’t taste beetroot, just delicious burger patties!

Easy Dinner Recipes For Beginners

Let’s enjoy breakfast and try my Easy Vegan Pancakes. Once you try paper pancakes, you’ll never go back! They are easy to prepare. Enjoy this chipotle bean salad for lunch. This salad can be made in advance and tastes better the longer it sits. So for dinner, my Vegan roll in a bowl must not be missing! It tastes like a roulade, but it is made from healthy foods.

Enjoy homemade vegan cream cheese on Sunday. Enjoy the rest of the Chiptole Lime Bean Salad (trust me, you’ll want to make it all the time)! And for dinner, try my Creamy Pesto Pizza. Menu members say this pizza tastes like a fancy restaurant! Try drizzling a little balsamic glaze over the top for extra pop.

And finally snacks and desserts. In the Easy Vegan Meal Plan, I have a section dedicated to this because you can enjoy it whenever you want throughout the week. For a tasty treat, try my recipe for baked chickpeas. I love how tough these chicks are! And for dessert lately, I’ve been loving vegan chocolate chips and banana squares. They taste like banana bread but fluffier!
