How To Roast A Whole Chicken To Perfection

This is a version of the herb and garlic butter roasted turkey breast I shared last year for Christmas/Thanksgiving. I’ve lost count of how many messages I’ve gotten asking for this type of chicken – I’m finally sharing it!

Seasoned with leather, lemon and herbs, fried to a deep golden sheen on the outside, and crispy on the inside.

Preparing a whole chicken for roasting is easy. The trick is to use a slotted spoon to scoop out the skin—the shape hugs the curves of the chicken and doesn’t tear the skin.

Then put a spoonful of garlic under the skin and spread it from the outside. Or hold it upright and pour water inside (see pictures below) – whichever you find easier!

Tip: Use more oil on the skin, that’s where you get the most bang for your buck. Also, garlic burns the skin, so you don’t want too much on the surface.

Once the chicken is heated through, place it on a bed of garlic and onion. This serves two purposes:

I like to marinate the chicken with lemon wedges and rosemary wedges. Not much by taste, because honestly, you can’t taste it. It’s the extra flavor you get when you cut the chicken

This is why we don’t put garlic in fried chicken. No reason – it’s not hot enough to make any difference in flavor with just steam.

10 minutes at 220C / 450F, then 1 hour 15 minutes at 180C / 350F until the internal temperature is 75C / 165F or until the water runs clear.

But seriously, give liquid gold a day. It was great! I mean, it’s garlic butter. Combine vegetable spices and a small slice of lemon. Mix with the juices from the roasted chicken.

Use it to top an epicbread bowl sandwich, chicken pasta salad, Chinese chicken salad, etc. on a frittata or omelet! Salad

1. Herbs – Rosemary and sage are great pairs with chicken, parsley adds a green color to butter and adds a slightly fresh touch. Feel free to use your favorite herbs. Go easy with lots of rosemary—it’s a tough herb.

2 – 3 teaspoons of dried herbs of your choice (use 2 teaspoons of dried herbs like thyme, oregano, sage, mixed herbs, tarragon or 3 teaspoons of bright dried herbs like dill, parsley, dill)

2. Onions and garlic: These do two things: lift the chicken slightly from the water and add tons of flavor to the pan juices used as a sauce. I don’t bother to peel the onions because I usually throw them away – they’re under the chicken, so they’re lean and very fatty. Feel free to use peeled onions.

3. Garlic-in-the-butter: Get more of the garlic-herb paste under the skin, because if it’s over the skin, the garlic will burn. So reduce the amount of garlic on the skin.

Melt the butter over medium heat, add the flour and stir for 1 minute. Add half the liquid while stirring. Mix and add the rest of the water, without the flour. Cook for 2 minutes, stirring constantly, until the gravy thickens. Add salt and pepper to taste.

7. Carcassmdrying sand/juice: Put everything in a pot or slow cooker and add about 2.5cm / 1″ of water above the chicken. Add 2 tablespoons of vegetable or chicken powder or 2 crushed cubes of celery, carrot and carrot. 8. On the side: baked potatoes (cut into slices, olive oil, salt, pepper and herbs, cooked for 40 minutes under the chicken), mashed potatoes or cauliflower or garlic bread. Also try Potatoes au Gratin or Easy Cheesy Potato Bake – it’s quick to make and can be reheated in the oven.

On the side of the photo on the side is the kale quinoa salad (I usually keep it on hand because it lasts for days). Some great salads are: Corn, Avocado and Tomato Salad, Roasted Pumpkin Spinach Salad, Garden Salad with Italian or French Dressing.

9. The meal takes 1.2kg / 2.4lb of meat and the rest discards the bones. And you throw some of the pan juices into the onion/garlic/chicken scraps, thinking they weren’t consumed.
